Ripe to the point you think it has gone. That is when the sugar is ready.

Frying pan · Slotted spoon · Kitchen paper

Method

    Pick plantain that is black in patches and soft under your thumb. Yellow is too early.

    Slice on a steep diagonal, about a centimetre thick, and fry in hot oil until deep amber on both sides.

    Drain, salt straight away, and hit it with chilli flakes.

If the pieces are pale, the plantain was not ripe enough. Nothing else fixes it.
